{"id":1410,"date":"2022-06-24T09:33:00","date_gmt":"2022-06-24T07:33:00","guid":{"rendered":"http:\/\/guyader-saveol.bzh\/?p=1410"},"modified":"2022-07-06T09:35:40","modified_gmt":"2022-07-06T07:35:40","slug":"les-moules-de-cordes-de-groix-par-nicolas-le-tirrand","status":"publish","type":"post","link":"https:\/\/guyader-saveol.bzh\/index.php\/2022\/06\/24\/les-moules-de-cordes-de-groix-par-nicolas-le-tirrand\/","title":{"rendered":"Les moules de cordes de Groix par\u00a0Nicolas le tirrand"},"content":{"rendered":"\n<p>Pour 6 personnes<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Ingr\u00e9dients :<\/strong><\/li><li>3,5kg de moules<\/li><li>2 gros oignons nouveaux<\/li><li>2 gousses d&rsquo;ail<\/li><li>Environ 30 petites pommes de terre<\/li><li>30cl de vin blanc<\/li><li>Vinaigre blanc<\/li><li>100g de beurre<\/li><li>2 poign\u00e9es de salicorne<\/li><li>1 citron vert<\/li><li>Gingembre, estragon<\/li><\/ul>\n\n\n\n<p>1 &#8211; \u00c9barber les moules<\/p>\n\n\n\n<p>2 &#8211; Dans une casserole, faire revenir des oignons nouveau, des gousses d\u2019ail enti\u00e8re, 30cl de vin blanc, 2 cuill\u00e8res \u00e0 soupe de vinaigre blanc.<\/p>\n\n\n\n<p>3 &#8211; Ajouter un morceau de 5cm de gingembre coup\u00e9 en petits morceaux. Ajouter de l\u2019estragon. Passer au tamis et garder juste le jus. Ajouter 100g de beurre coup\u00e9 en morceaux et 30cl de cr\u00e8me liquide pour stabiliser la sauce.<\/p>\n\n\n\n<p>4 &#8211; Faire chauffer une grande casserole d\u2019eau. Plonger les moules dans l\u2019eau bouillante 30 secondes max, pour les ouvrir. Les d\u00e9cortiquer. Les r\u00e9server et les remettre \u00e0 chauffer dans la marmite vide pour 2 minutes avant de dresser.<\/p>\n\n\n\n<p>5 &#8211; Blanchir des petites pommes de terre. Les arroser du jus de moule et les mettre au four \u00e0 180 degr\u00e9s environ 10 minutes.<\/p>\n\n\n\n<p>Dressage : mettre 5 pommes de terre par assiette, 2 cuill\u00e8res \u00e0 soupe de moules. Saucer le tout. Parsemer de salicorne.
