D\u00e8s l\u2019ouverture, les d\u00e9barrasser, Filtrer le bouillon. Le faire r\u00e9duire.<br>Pendant ce temps, cuire les pommes de terre \u00e0 l\u2019anglaise (eau sal\u00e9e) puis retirer la peau.<br>Monter le jus de coquillage au beurre, finir la cuisson des pommes de terre dans la pr\u00e9paration. Y ajouter les coquillages d\u00e9cortiquer (en garder quelques un entiers pour le d\u00e9cor)<br>Tailler l\u2019andouille en lamelles fines et les saisir au beurre.
